Spicy Mexican Bowl

Black beans are high in fiber, potassium, folate and B6 which are great for heart health and lowering cholesterol.

Serves 2 | 30 minutes


1 zucchini, sliced

200g tinned chickpeas

200g tinned black beans

1 onion, sliced

1 red capsicum, sliced

1 long red chili, sliced

1 avocado, sliced

1 tsp cumin powder

1 tsp coriander powder

2 tsp smoked paprika powder

pinch salt and pepper

2 tbsp oil

1/2 lemon, juiced


  1. Heat a large frying pan to medium to high heat. Add oil and onion and chili. When the onion is translucent, add capsicum and zucchini. Add cumin, coriander and smoked paprika. Cook for 5 minutes.
  2. Drain chickpeas and beans. Add to the pan. Add salt, pepper and lemon juice.
  3. Serve, adding avocado and extra lemon if required.
