Simple Protein Breakfast

Eggs are a fabulous source of vitamin D, zinc and iron. Also boost your healthy fat intake with avocado which is rich in magnesium.

Serves 1 | 15 minutes


1 tbsp Pine nuts

1 Egg, boiled

1/2 Avocado, sliced

2 pieces rye or sourdough bread

Pinch salt and pepper

  1. Place your egg into a saucepan of water and bring to the boil for 5-8 minutes depending on how you like your eggs.
  2. Place the pine nuts into a separate pan on medium heat to brow. Don’t take your eyes off them, as they don’t take long and easily burn.
  3. Toast your bread.
  4. Once your egg is boiled, slice it into pieces. To assemble, place the avocado onto the toast and top with the egg and pine nuts with a pinch of salt and pepper to taste. (optional – add a squeeze of lemon).
